LIMA BEAN CASSEROLE

Cover beans with cold water and leave to soak overnight.
Drain, turn into laege pan. Add carrot, onion, celery, tomato, pinch salt and pepper. Cover with 3 cups cold water.
Bring to boil, reduce heat and simmer covered 1 hr. Stir frequently.
Drain and discard liquid.
Turn into casserole dish, stir in butter, oil and 1 tsp thyme.
Bake covred 2 hrs until tender. Stir several times
