BACON STUFFED CHICKEN BREASTS

Fry bacon 5 mins. Add half butter to pan and fry onion for 5 mins.
Remove from heat and stir in bacon, breadcrumbs, egg yolk salt & pepper. Cool
Flatten chicken between sheets of cling film
Divide stuffing between breasts. Roll up and secure with cocktail stick. Put in ovenproof dish add wine and cover tightly. Bake 30 mins
Remove chicken, keep warm reserve liquid
Melt remaining butter in pan, add flour, cook 30 secs. Remove from heat and gradually add 300 ml cooking liquid stirring until blended.
Return to heat and bring to boil stirring continously until sauce thickens. Stir in cream and seasoning. Pour over chicken and serve.
