APPLE CRUNCH

Shallow ovenproof dish
In saucepan peel core and slice apples. Melt butter, add apples and sugar. Cover and cook over low heat until soft and thick.
Remove from heat, stir in lemon rind. Spread in dish.
Prepare moderate grill.
Remove crusts from bread. Cut bread into .25in cubes. Melt butter in suacepan Stir in bread cubes, coconut and demerara sugar.
Pile on top of apple mixture.
Grill until golden.
Serve immediately
