Spice Islands Banana-Date-Walnut Bread

2 cups | unbleached white all-purpose flour or whole wheat pastry flour, (plus a bit extra for the pans) |
1 | lemon, (rind and juice of) |
3 | extremely ripe, black-speckled bananas |
1/4 cup | mild vegetable oil, such as corn, canola, or peanut |
1/3 cup | brown sugar or Rapidura |
3 tbsps | buttermilk or plain unflavored yogurt, (or plain soy yogurt) |
1/2 tsp | salt |
1/2 tsp | baking powder |
1/2 tsp | baking soda |
6-8 | vigorous gratings of nutmeg |
1/2 tsp | ground cinnamon, specifically Saigon |
1/2-1 cup | pitted, chopped dates |
3 tbsps | toasted, chopped walnuts |
1) Preheat oven to 375. Select a pan or pans: either 1 large, 6x3 inch loaf pan or 3 small, 5x2 in loaf pans. If they aren't nonstick, spray thoroughly with cooking spray then dust with a little flour, knocking out any excess.
2) Place the lemon rind in a food processor along with bananas. Pour the lemon juice over the bananas. Add the oil, brown sugar, and buttermilk and buzz to a smooth puree. Set aside.
3) In a medium-large bowl, combine the flour, salt, baking powder, baking soda (if these ingredients are at all lumpy, sift them in), nutmeg, and cinnamon. Set aside.
4) Combine the dates and nuts in a small bowl. Remove 1 tbsp of the flour mixture and sprinkle it over the dates. Toss well to coat.
5) Pour the banana mixture into the flour mixture and stir to thoroughly combine but don't overbeat. Stir in the dates and nuts, and turn the stiff batter out into the prepared pans. Cook for 40-50 minutes for the large pan, 30-40 minutes for mediums and 25-35 minutes for smalls. Let cool in the pans for 10 minutes, then turn out onto wire rack to cool.
