Chowder/ stews/soup minestrone soup

Vegetarian homestyle cooking Jeanne Tiberio 1 pinion diced | |
1 tablespoon | olive oil |
2 quarts | water |
1 cup | green beans |
2 | tomatoes chopped or diced |
3 | carrots sliced |
2 | potatoes diced |
If using red potatoes keep skin on | |
1teaspoon | dried basil |
1/2 teaspoon | dried oregano |
1/2'teaspoon dried rosemary | |
15 ounce | can pinto beans divided |
1 cup | small dry pasta |
In a large soup pot sauté onion in the oil. Add all ingredients except beans and pasta. Simmer. Add 1/2 beans and puree 1 minute or less
Add remaining beans to pot Cook on med 15 minutes. Bring to boil. Add pasta cooking another ten minutes. Or until pasta is done
