Cayman Islands: Canadian Butter Tarts with Berries

Mini Tart Shells – 10 each Raisins – ½ cup Pecans – ½ cup Eggs – 3 Brown Sugar – 1 cup Corn Syrup – 1 cup | |
Butter, unsalted – ½ cup [softened] |
Vanilla Essence – 2 tbsp
Salt – a pinch
Mixed Berries – 2 cups [garnish]
METHOD:
Preheat Oven: to 350º F
Place tart shells on a baking tray
Divide the raisins and pecans evenly among the tart shells
Beat together the Eggs, Butter, Corn Syrup, Brown Sugar, Vanilla and Salt
Pour over the raisins and bake till set – about 15-20 minutes
Let cool and Unmold
To serve:
Divide the berries among the 10 plates and place one tart on each
