Lasagna

    1 1/2 lb.  ground lean beef
    1 can  tomato chunks
    500 ml  cottage cheese, (light or 2%)
    16 strip  lasagna noodles, (I like using whole wheat- do not buy no name brand - they don't cook as well)
    2 clove  fresh garlic, (mince)
    1 lb  mozza cheese, (grated)
    1/4 cup  red wine, (optional)
    1 small can  tomato paste

DIRECTION:

Fill large pot half full of water. Add 1/2 tsp salt. Bring to boil. Add Lasagna noodles one at a time. Make sure noodles are fully emmerse in water. Let boil uncovered, stirring constantly to avoid sticking. It will take approx 15-20 minutes for the Lasagna to soften. Pinch noodle to determine the softnest. When it is ready carefully put in colander and run very hot water on it. Use noodles lifter to turn them over. add 1 tbsp oil and mix again (the idea is so the noodles do not stick to each other). Set aside.

Spray pam in a large pot lightly. MEDIUM HEAT. Add meat, constantly seperating the meat (just like when you cook spaghetti sauce) When you do not see anymore glob of meat, cover and simmer for about 5 mins. Turn off stove. Drain fat from meat ( I usually put the fat in an empty can - so it doesn't clog your drain) Again stir your meat - make sure meat is not in globs. Turn on stove between MEDIUM AND LOW HEAt. Put back the pot with meat on the stove. Add tomatoes and all seasonings. Try squishing the tomato chunks. When you think most pieces of tomatoes are squished, add tomato paste and wine. Cover and simmer for 20 minutes, stirring often. Let set for at least an hour to get the best result. Just before putting your Lasagna together mix the cottage cheese with your sauce.

Now you are ready. Spray Pam to 9 X 12 pan (any pan will do). Lay Lasagna layer one at a time. Some of them will be rip, so you have to emprovise and sort of put them together covering the bottom of the pan. Add thin layer sauce and very thin layer of cheese. Repeat 3 times. The last layer will be the meat. Cover meat with cheese. Partly cover pan with foil. Make sure foil doesn't touch the meat. You will have some pasta over (I always cook 3 more strips of Lasagna, just in case the pan is bigger)

In preheat oven 350 put in Lasagna for 50 minutes. Take out the foil cover. turn your over to broil for 10 minutes. Let stand for 30 minutes before serving.
