Amy Neidig's Awesome Cheese Grits

1 1/2 cups | quick cook grits |
6 cups | water |
1 lb | American cheese, (or Velveeta) |
1 stick | butter |
2 teaspoon | season salt |
dash | hot sauce to taste, (Tabasco or Tapatio) |
3 | beaten eggs |
Directions:
Cook the grits in the water according to the directions on the grits box. Stir in butter until melted. Stir in cheese until melted. Add the season salt and hot sauce. Add some of the grit mixture slowly to the eggs to raise the temperature of the eggs (This will keep them from curdling when you put them in the mixture. This is called tempering.). Add the tempered eggs to the grit mixture. Make sure everything is mixed thoroughly. Pour into a greased 9x13 pan.
Slowly bake @ 250 degrees for one hour (or until set).
