Chicken with Garlic Sauce

4 (6 oz.) | boneless, skinless chicken breast halves |
1/4 tsp. | salt |
1/4 tsp. | freshly ground black pepper |
1 Tb. | canola oil |
! Tb. | butter |
4 | garlic cloves, thinly sliced |
3/4 c. | fat-free chicken broth |
2 tsp. | fresh lime juice |
1 Tb. | minced fresh cilantro |
4 | lime wedges |
1. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/2" thickness using a meat mallet or small heavy skillet. Sprinkle chicken evenly with salt and pepper.
2. Heat oil in a large nonstick skillet over medium heat. Add chicken; cook 6 minutes on each side or until done. Remove chicken from pan; keep warm.
3. Melt butter in the pan over medium-low heat. Add garlic; cook 1 minute (do not brown). Add broth; bring to a boil, scraping pan to loosen browned bits. cook until broth mixture is reduced to 1/2 cup (about 4 minutes). Remove from heat, and stir in lime juice. Serve sauce over chicken; sprinkle with cilantro. Serve with lime wedges.
