Chicken Salad Croissants

2 c. | cooked chicken, cubed |
2/3 c. | mayonnaise |
1/3 c. | celery, diced |
1/4 c. | raisins |
1/4 c. | sweetened, dried cranberries |
1/4 c. | slivered almonds |
1 Tb. | fresh parsley, minced |
1 Tb. | lemon juice |
1 tsp. | mustard |
1/8 tsp. | pepper |
6 | lettuce leaves |
6 | croissants, split in half horizontally |
Combine the first 10 ingredients in a large bowl; mix well. Cover and refrigerate for 2-3 hours. Place a lettuce leaf on the bottom half of each croissant; top with about 1/2 cup chicken mixture. Add the top of croissant.
