Full of beans/chilis--Vegetarian Chili

1/2 cup | chopped onion |
1 clove | garlic minced |
1/4 cup | white wine |
1 tablespoon | chili powder |
1 teaspoon | basil |
1/4 tsp | oregano |
1/4 teaspoon | cumin |
1 cup | finely chopped zucchini |
1 cup | finely chopped carrots |
28 punches diced tomatoes drained | |
1 cup | cooked kidney beans rinsed and drained |
1 cup | water or vegetable broth |
In a large pot sauté onions and garlic in wine until soft. Mix in spices. Add zucchini and carrots and cook for two minutes over low heat stirring occasionally. Stir in tomatoes and bring to a boil. The. Reduce heat and simmer forty minutes. Adding water to desired consistency
