Crispy Chicken Tacos

6 ounces | skinless boneless chicken breast |
salt, pepper for flavoring | |
1 teaspoon | olive oil |
-1 and 1/2 cup thinly sliced Spanish onion | |
2 tablespoons | freshly squeezed lime juice |
4 teaspoons | dried cilantro |
1 teaspoon | ground cumin |
4 medium | whole grain tortillas |
2 tablespoons | nonfat sour cream |
1/4 cup | low fat shredded cheddar cheese |
•Place chicken in large saucepan add salt, pepper and enough water to cover the chicken. Cook over medium heat for 25 minutes or until chicken is fully cooked.
•Take out and shred with fork.
• Heat olive oil in a nonstick skillet.
•Add onion and cook for one minute. Add shredded chicken and stir until crispy.
•When most liquid is gone, drizzle lime juice over chicken.
•Season with cilantro, cumin, salt, and pepper.
•Place tortillas on plates.
•Add chicken, sour cream, and cheese.
