Raspberry Tiramasu

1 pint | Heavy Whipping cream |
8 tbsp | sugar |
2 10 oz. containers | Marscapone cheese |
1 | Navel Orange |
2 cups | raspberry jam |
4 tbsp | Gran Manier |
20 oz. | pkg of lady finger cookies |
2 10 oz. Containers | fresh raspberries |
Modified from Rachael Ray's recipe.
Instructions:
1. Zest of Navel Orange and further mince finely
2. Blend over medium heat ( do not boil!) the juice of the orange, raspberry jam and Gran Manier (optional). Once all ingredients are blended set aside and cool.
3. Begin whipping all the cream. Add sugar and minced orange zest until soft peaks are formed.
4. Gently fold the Marscapone cheese and whipped cream until well blended.
5. In a glass 9x9 container begin by pouring 1/4 of the orange/raspberry liquid to cover the base of the container. Next create a layer of lady finger cookies in the container. Once the first layer of cookies have been placed pour 1/4 of the orange/raspberry liquid over the cookies.
6. Carefully spread approximately half the Marscapone cream over the lady fingers.
7. Create a second layer repeating steps 5 and 6. Optional: mix 4 tbsp of Cocoa powder and 4 tbsp of powdered sugar between layers.
8. Coarsely crush remaining lady fingers and cover top layer.
9. Arrange fresh Rasberries on top layer
10. Chill 4 hour best results if left overnight
11. Invite friends and family enjoy!
