Whole-Wheat Pasta with Walnuts, Spinach, and Mozzarella

4 ounces | whole-wheat spaghetti |
1 tablespoon | olive oil |
1/2 cup | chopped walnuts |
1 clove | garlic, finely chopped |
2 cups | organic spinach, torn |
1 teaspoon | dried basil |
salt | |
freshly ground pepper to taste | |
2 tablespoons | shredded organic fresh mozzarella |
DIRECTIONS
Cook the pasta according to the directions on the package.
Heat the oil in a skillet over medium-low heat. Toast the nuts for 3 to 4 minutes, stirring frequently. Add the garlic, spinach, basil, salt, and pepper. Cook for 3 to 5 minutes, turning frequently.
Toss with the cooked pasta. Top with the cheese.
