Full of Beans/Chili lentils with mixed peppers

3 tablespoons | olive oil |
1 | onion diced |
1 | red bell pepper diced |
1 | yellow bell pepper diced |
2 cloves | garlic minced |
3 cups | vegetable broth |
1/2 cup | dry lentils |
1 cup | uncooked rice |
In a skillet sauté the vegetables and garlic in oil until tender add the broth and lentils. Simmer fifteen minutes reduce heat and add rice
Cook on low heat for about thirty minutes or until rice is done
If desired top with low fat sour cream
