    1  red pepper
    1  yellow pepper
    1  eggplant
    1  zucchini
    1 pkg.  frozen spinach, or some fres

    1 1/2 cup(s)  mushrooms
    1  onion
    1 - 2 cloves  garlic
    1 litre  tomato sauce
    1/3 tbsp  oregano
    1/3 tsp  basil
    1 carton  ricotta cheese

Roast peppers, eggplant, zucchini onion and garlic at 350 for 15 min with
olive oil. Mix sauce, spices, and mushrooms. Mix spinach and ricotta
cheese. Layer as for lasagna 350 for 1 hr.
