Gravies and Sauces--Chunky tomato sauce

1 tbls | olive oil |
2 | carrots chopped |
1 | sweet onion diced |
2 stalks | celery diced |
2 cloves | garlic minced |
28 ounce can | plum tomatoes |
stewed tomatoes, alternative | |
2 tablespoons | tomato paste |
1 tablespoon | dried parsley |
2 teaspoons | dried oregano |
1 teaspoon | dried basil |
Black pepper to taste |
Sauté carrots onion celery and garlic. Six to seven minutes
Add all of the remaining ingredients and bring to a simmer
Cook fifteen minutes over low heat stirring occasionally
As the sauce cooks use the edge of a spoon to break up the chunks of tomatoes
Ladle the sauce over plates of cooked pasta
Vegetarian times low fat and fast pasta
