    2 cups  1/2 n 1/2
    1 cup  chopped toasted almonds sliced thin
    1/2 cup  honey
    1/2  vanilla bean split, scraped, seeds reserved
6 eggs yolk
    2 cups  sliced fresh mango, (optional)
    1 1/2 cups  sliced fresh strawberries
    11/2 cups  sliced fresh peaches
    1 cup  sliced kiwi

In saucepan combine 1/2 n 1/2, almonds, honey, vanilla bean n seeds, bring to a simmer med heat, do not boil. Remove from heat.

In medium bowl whisk egg yolks until smooth, whisk constantly , slowly pour 11/2 cups hot half n half mix in saucepan. Return to med heat, heat cook, stirring constantly until temp reaches 170' on candy thermometer.

Strain mixture thru a fine mesh strainer in med bowl.cool completely in ice bath. Stir frequently. Cover chill at least 4 hours or over night. Serve in bowl top with fruit and sliced almonds.
