Main Dishes Quick and Easy Mac and Cheese

8 oz | uncooked penne pasta |
1/4 cup | butter |
1/2 medium | sized sweet onion, chpd |
1/2 (16 oz) | mild Mexican cheese, cubed |
1 8 oz sour cream
1 14 oz diced tomatoes and green chilies, drained
Prepare pasta. Melt butter in skillet, add onion and sauté 3 to 5 minutes or until tender. Add cheese and cook, stirring constantly until cheese melts. Stir in sour cream, stirring until well blended. Stir in tomatoes and chiles mixture and pasta. Stir constantly 5 minutes or until thoroughly heated.
( original recipe had Velveeta Mexican blend, I used shredded)
