Molasses Glazed Turkey

350 degrees 1 15lb turkey | |
2 cups plus 2 tbs | chicken stock or veggie stock |
3 tbs | melted butter |
1 tbs | molasses |
1 tsp | red wine vinegar |
Butter 6 cup roaster. Rinse, remove all inside from neck and tail, dry bird. Tuck wings under and tie legs together. Place breast side up on rack in roasting pan. Brush 2 tbs of melted butter over bird. Pour 1/2 cup stock into pan.
Roast turkey 2 1/2 hours basting with pan juices and adding 1/2 cup of stock to pan ever 45 minutes. Mix remaining melted butter with molasses and vinegar and brush glaze over turkey. Roast turkey until meat thermometer inserted into thickest part of thigh reaches 175 degrees, roast 30 minutes longer. Transfer turkey to platter, tent with foil and let rest 20-30 minutes.
