Cedar-Planked Salmon

    Maple Marinade:  
    1 c.  pure maple syrup
    2 Tb.  minced fresh ginger
    1/4 c.  fresh lemon, or lime juice
    1/4 c.  soy sauce
    2 Tb.  minced garlic
      
    Salmon:  
    2 Tb.  vegetable oil
    1 (3 1/2 lb.)  center-cut salmon fillets with skin
    1 c.  chopped green onions

1. To Make the Marinade: Combine all the ingredients in a saucepan. Boil over medium-high heat until reduced to about 1 cup. this can prepared up to 2 days in advance.

2. Brush half of the marinade on the flesh side of the salmon and let rest at room temperature for 30 minutes.

3. Preheat the oven to 350 degrees. Soak the plank in cold water for at least 30 minutes. Sprinkle the plank with the green onions and lay the salmon, skin side down, on top. Brush the salmon once more with the marinade. Roast for 30-35 minutes, until firm and opaque and an instant-read thermometer registers about 140 degrees.

4. Let the salmon rest for 5 minutes before slicing. Bring remaining marinade to a boil and serve on the side.
