Cheese bruschetta Judy & Russ

Bruschetta: | |
1 loaf | sliced sour dough baguette, (you can toast in the oven if you want but, I don't do that) |
1 | red pepper |
1 | yellow or orange pepper |
1 very large onion | |
1 package | Gambazola cheese, (room temperature) |
1 package | Gorgonzola cheese,, (room temperature) |
Olive oil | |
salt | |
pepper to taste |
Thinly slice peppers & onion and saute in frying pan in hot olive oil until onions are carmalized and veggies are very limp - salt & pepper to taste. Takes a little bit of time. Remove peppers/onion from pan into a bowl to cool, so that you can handle without burning yourself. I use a fork to spread mixture on bread.
Spread softened Gambazola on each slice of bread, add peppers & onions, then top with a few crumbles of Gorgonzola.
