Bruschetta Chicken Bake

Source:
1 can | diced tomatoes, undrained, 14 1/2 oz can |
1 pkg | Stove Top Suffing Mix for Chicken, 6 oz |
1/2 cup | water, Or 1/4 water and 1/4 white wine |
2 cloves | garlic, minced |
1 1/2 lbs | boneless skinless chicken, cut into bite size pieces |
1 tsp | dried basil leaves, or about 6 fresh basil leaves |
1 cup | mozzarella cheese, enought to cover the chicken, about 1/2 a pound |
Heat oven to 400
Stir tomatoes, stuffing mix, hot water and garlic until stuffing mix is moist
Place cut-up chicken in a 13x9 inch baking dish
sprinkle with basil
top with cheese
top with stuffing mixture
Bake 30 minutes or until chicken is cooked through
Note would be better with onions and celery added into the stuffing mix
Might want to brown the chicken in olive oil (do not cook completely), drain and reduce baking time a bit
