Caramelized New Potatoes

20 small | new potatoes, scrubbed |
1/2 c. | butter |
1/2 c. | brown sugar |
Cook unpeled potatoes in well-salted boiling water 15-20 minutes, or until tender. Remove from heat, drain, and allow to cool slightly; peel. Melt the butter in a large, heavy skillet over medium heat. Stir in the brown sugar and cook, stirring constantly, until the mixture bubbles ad thickens slightly (about 5 minutes). Add the potatoes and cook 2-3 minutes, stirring constantly until the potatoes are thoroughly coated with the caramel. Place in a heated serving dish and serve immediately.
