Side Dishes Holiday Easter Jello Mold

2 pkg | unflavored gelatin |
1 1/2 cup | canned pineapple juice or more if needed |
1 large can | crushed pineapple in heavy syrup |
1 cup | orange juice |
2 8 oz creme cheese | |
1/2 cup | sugar |
1/8 T | lemon juice |
Orange food coloring | |
melon balls for garnish |
Drain pineapple, reserving liquid
Dissolve gelatin in 1/2 cup canned pineapple juice. Set aside
Heat one cup liquid drained from canned pineapple ( add extra pineapple juice if needed to make 1 cup)
Add sugar and gelatin mixture to very hot juice and stir well for a few minutes
Add 1 cup canned pineapple juice, 1 cup orange juice, lemon juice, food coloring if desired
Chill to consistency of softened creme cheese
Place in ring mold and chill until firm
Fill center with melon balls and serve
