Caramel Sauce for Angel Food Cake

3 Tb. | brown sugar |
1 Tb. | cornstarch |
1 c. | canned evaporated skim milk |
1/2 tsp. | vanilla |
Combine brown sugar and cornstarch in a 4-cup glass measuring cup, stirring well. Gradually stir in milk. Microwave 2 minutes on high; stir. Microwave 1 more minute on high or until boiling. Stir well and blend in vanilla. Makes 1 cup.
This is a nice sauce to serve over angel food cake. Two Tb. of the sauce served over a 2 oz. slice of angel food cake is 184 calories.
