Grilled chicken & peaches

| 1 T | white wine vinegar |
| 1/2 t | grated ginger |
| 3 T | olive oil |
| 2 | sliced red onions |
| 4 | chicken breasts |
| 3 | peaches |
| 1 bunch | spinach |
Mix vinegar, ginger, 1 T oil, S &P, set aside
Brush chicken, onions and peaches w mixture. Grill chicken & onions. Grill peaches until charred. Combine leaches, onions, spinach & vinegarette. Serve w chicken.
