Sweet Potato Salad

4 | sweet potatoes |
1/4 C | mayo |
2 T | Dijon |
4 ribs | chopped celery |
1 small | sweet red pepper, (diced) |
1 cup | fresh pineapple |
2 | scallions |
1/2 C | chopped pecans |
Wrap potatoes individually in foil. Peel and cut into 3/4 inch chunks
Mix dressing, then add all but pecans. Refrigerate 1 hr. Add pecans & fresh chives
