White Beans (crock pot)

| 1 lb | dried great northern beans |
| 1 | bell pepper diced |
| 1 | sweet onion diced |
| 3 | green onions chopped |
| 3 tbsp | minced garlic |
| 1/2 tbsp | thyme |
| 1 tbsp | cayenne |
| 2 | bay leaves |
I pack smoked sausage chopped
Soak beans on water overnight. Drain and rinse. Brown the smoked sausage (optional). Combine all ingredients in the crock pot with 4 cups of water. Set on low for 8 hours. When done, mash some of the beans to thicken the sauce. Serve over rice.
