Traditional english beef pie

Trad English beef pie recipe | |
750g | braising steak-Skirt chuck or shin steak |
2 to 3 | onions |
1 clove | garlic |
1 | bay leaf |
Puff pastry | |
6 to 7 | mushrooms |
2 - 4 Rashers bacon | |
500 ml | dark ale. Eg Abbotts |
250 ml | beef stock, (too much) |
2 tbls | flour for thickening roux |
Made with 1 tbs butter or fat
-brown meat
-fry bacon pieces
-care slide onions in butter or fat
-make up roux with stock
-add all ingredients and add beer
- let beer reduce down before adding
quartered mushrooms and spices
-cover and simmer for 45 mins to an hour
-Pile up meat in a dish (so pastry does not sink)
- coat rim of pie dish with egg wash and cover with pastry ( use 2 layers if using ready puff rolled together)
- coat with egg wash before baking
Pierce a few holes in the cover
in 200 deg oven for 25 to 30 minutes
