Macaroni & Cheese

    1 package  Roni Mac, (Large Elbow Macaroni)
    1/4 cup  Butter
    1/4 cup  Flour
    1/2 tsp  Salt
    1/4 tsp  Pepper
    2 cups  Milk
    2 to 3 cups  Cheddar Cheese
    1 cup  Cheese

Cook Macaroni as per instructions on the bag. Preheat oven to 325. In a medium sized pot, melt butter, add Salt & Pepper, and add flour. Over medium heat, stir until smooth and slightly browned. Add Milk in small increments (keeping it smooth & lump free), stir until boiling. Reduce heat to low, add slowly add cheese (2 to 3 cups to taste), remove from heat. In a large bowl combine Cheese mixture with drained Macaroni, pour into casserole dish and top with remaining Cheese. Bake @325 for 30 minutes. Let sit 10 min before serving, cover loosely with aluminum foil. Enjoy!
