Clean, massage inside w s&p. Add lemon pieces, orange chunks and garlic cloves. S&p whole bird and season. |
Take string and tie legs. 1st roast 450 for 20-30 min, then 1 hr at 400. During roasting Baste w chicken stock.
Also Baste with citrus glaze:
(also good for fish)
1/4 cup frozen ok, lemon juice from 1 lemon, add oregano, garlic cloves, extra virgin olive oil, ground s&p. Whisk it all. Brush onto chicken after it's done.
Take off strings, take out lemon and orange. Take what's in pan, add chicken stock and raise heat couple min for gravy.
