Rice Meatballs

From Nana's Kitchen Ingredients: | |
1 c. | Minute rice |
1 lb | ground beef |
2 tsp | grated onion |
1 | egg, slightly beaten |
2 tsp | salt |
Dash | pepper |
2 1/2 c | tomato juice |
1/2 tsp | sugar |
Directions: combine rice with beef, egg, onion, salt, pepper and 1/2 c tomato juice. Mix lightly and shape into meatballs and place into skillet. Add sugar to remaining 2 c of juice. Pour over meatballs. Bring mixture to a boil, reduce heat, simmer covered 15 minutes, basting occasionally. OR preheat oven to 350• and bake 1 hour.
