Lamb Spiedinos ( Spiedies ) with Cucumber Salad

Chef recommendation- marinate meat for a few hours. The marinade is strong enough to take effect after a few minutes. Serves: 4 | |
2 lbs | lamb leg or shoulder, excess fat removed and cut into 3/4 " cubes |
1/8 t | black pepper |
2 1/2t | salt |
1T | lemon zest |
1T | finely chopped fresh Rosemary leaves |
3 cloves | garlic grated on a micro plane, (yielding about 3 t) |
4 T | olive oil |
1 English cucumber (about 1 lb) | |
4 T | chopped mint |
1 t | lemon juice |
4 T | Greek yogurt |
What to do:
-Sprinkle meat w pepper and 2 t salt
-In a med bowl , mix zest, Rosemary, garlic, and 2 T oil. Add meat and toss to coat. Set aside.
-thread lamb onto 8 skewers
- halve cucumber. Slice halves crosswise into 1/8 " half moons.
- set large sauté pan over med heat. Once hot, swirl 1 T olive oil. Lay skewers in pan. For medium doneness cook 6 minutes, about 3 minutes per side. Move skewers around as needed to ensure even cooking. Transfer to platter and let rest.
- if grilling, grill over med high heat, 2-3 minutes per side
- in med bowl, toss cuke w mint, 2T lemon juice, yogurt, and salt
- drizzle 1 t lemon juice and remaing olive oil over lamb.
- distribute cucumber salad on 4 plates. Place 2 skewers next to or on top of each salad
