Mild English mustard
Cover meat with water and refrigerate overnight to desalt. Rinse meat before placing into fresh pot of water add ingredients to pot and bring to the boil. Cover and allow to simmer for 25-30min per 500g. Meat is cooked when a knife can be passed easily into the centre of the meat.
