Prep roast with 2 tbs oil, pepper, salt and 1/2 tbs plain flour over the fat. Sear joint in oven pan whilst preheating oven to 210C. Chop veg and scatter into tray with joint. Roast for 15min baste, turn oven down to 175C for 17min per 450g and an extra 15min for medium. Allow to stand for twenty min under tinfoil. |
