BERRY PIE Crust Ingredients: | |
2 cups | graham cracker crumbs |
3 Tbsp. | raw sugar or evaporated cane juice |
1 Tbsp. | organic half and half |
1/2 cup | butter, melted |
Filling Ingredients: | |
4 cups | organic berries, (I like a mixture of colors/textures- blueberries, raspberries, strawberries and blackberries) |
1/2 cup | evaporated cane juice |
2 Tbsp | cornstarch |
2 Tbsp | lemon juice |
2 Tbsp | cold water |
Make the Crust:
Fun method: Put crackers in a gallon size ziplock, seal, and pound with a hammer, being careful not to break the bag. Quick method: In a blender or food processor, grind the Graham crackers to a cornmeal-like consistency. If using a processor, add remaining ingredients and process until blended. Otherwise, pour the cracker crumbs into a large bowl, add remaining ingredients and mix well. Press dough into a 9-inch pie plate or springform pan and bake at 350 for 15 minutes.
Make the Filling:
Put berries into a saucepan and heat gently until they begin to break down and bubble. Lower heat and simmer about 10 minutes. Stir in cane juice and lemon juice and simmer another 2 minutes.
In the 2 Tbsp cold water, mix the cornstarch to a thin paste. Stir this into the berries. Continue stirring until mixture begins to thicken; then cook for another minute and remove from heat.
Finish Your Pie:
Cool filling slightly, then spoon into prepared crust. Refrigerate to chill. For extra sparkle and an immune boost, add a drizzle of clear raw honey before serving. Invite some friends over, or call in the family, dig in and enjoy!
