Creme Fraiche Coffee Cake

117 gr | chopped walnuts, (toasted) |
82 gr | light brown sugar |
5 gr | ground cinnamon |
100 gr | chocolate chips |
Mix above ingredients together, set aside. Batter: | |
6 large | eggs |
6 cups | crème fraiche, (or sour cream) |
40 gr | vanilla |
672 gr | cold butter cubed |
1200 gr | sugar |
3 | lemon zest |
1332 gr | Pastry flour |
41 gr | baking powder |
18 gr | salt |
Directions:
Preheat oven to 325.
In a bowl, mix dry ingredients. In another bowl whisk crème fraiche, eggs and vanilla together. In a mixing bowl paddle butter and sugar together till light and fluffy. Add the crème fraiche mixture to the creamed butter a little at a time till fully incorporated. Add the dry ingredients in 3 batches till fully incorporated. Bake for about an hour till firm to the touch.
