400 Gr | sugar |
20 Gr | salt |
200 Gr | light corn syrup |
600 Gr 22% (light) | cream |
1 | vanilla |
Combine sugar, salt and corn syrup with one-third (1/2 cup) of the cream. Boil over low heat until it reaches a temperature of 118 degrees Centigrade. Cook as slowly as you have patience for.
Add another third of the cream and again boil to 118 degrees.
Add remaining one-third cream and boil to 122 degrees Centigrade. Add vanilla.
Pour into a buttered pan to a depth of one-half inch. Let cool undisturbed. Cut into squares and, if desired, wrap individually in plastic wrap.
