Blender gazpacho

2 cups | tomato juice, low sodium or from juicer |
1 tbsp | red-wine vinegar |
2tbsp | fresh lemon juice |
2tbsp | olive oil |
2 medium | cucumbers, peeled and chopped |
1 | red bell pepper, chopped |
1/2 small | sweet onion, chopped |
1 medium | tomato chopped |
1/2 cup | fresh basil |
Put all in blender or food processor. Pulse for chunkier consistency. Can add s and p and hot sauce for taste. Chill for an hour.
