Brownie Bran "Cookies"

|FROM: EAT UP SLIM DOWN ANNUAL RECIPES 2004 A tasty dessert for health-conscious chocoholics. These chocolate-coconut cookies feature bran cereal--so besides being easy to bake, they offer the perfect alias for fiber. INGREDIENTS Serves: Prep: 10min Cook: 12min Total: 22min|
|1 box (21 ounces)||low-fat brownie mix|
|2 1/2 cups||unprocessed bran|
|3/4 cup||orange juice|
|1/2 teaspoon||coconut extract|
|almond extract, alternative, optional|
|Confectioners' sugar,, (optional)|
Preheat the oven to 350°F. Coat 2 baking sheets with cooking spray.
In a large bowl, combine the brownie mix and bran. Add the orange juice and coconut extract and stir to combine. Drop the dough by rounded teaspoons onto the prepared baking sheets.
Bake for 12 minutes. Remove to a rack to cool. Lightly dust with confectioners' sugar, if using.
Cary notes that these cookies will firm up as they cool, and that they keep very well in the freezer. Just place them in a zip-top freezer bag. Unprocessed bran is available in the cereal aisle of supermarkets.
