Baked Sweet Potatoes and Apples

4 medium | sweet potatoes, peeled and sliced |
4 small | tart apples, sliced |
1/2 cup | raisins |
salt | |
1/4 cup | pineapple juice |
3 tablespoons | butter, melted |
1 tablespoon | brown sugar |
DIRECTIONS
Preheat the oven to 350°F. Butter a 2-quart baking dish.
Arrange the sweet potatoes, apples, and raisins in alternate layers in the dish, seasoning lightly with salt as you layer.
In a small bowl, stir together the pineapple juice, butter, and brown sugar. Pour over the sweet potatoes and apples. Cover and bake for 30 minutes, or until the sweet potatoes are cooked through.
