Caramelized onion mashed potatoes

Ingredients: | |
4 large | potatoes, peeled and cubed |
6 tbsp | unsalted butter |
1 large | sweet onion,, (Vidalia), quartered and thinly sliced |
1 clove | garlic, minced |
4 tbsp | heavy cream |
Salt to taste | |
Pepper to taste |
Directions:
Put potatoes in a Large saucepan and cover with water.
Bring to boil, reduce heat to medium, cover with lid and simmer until tender (approx. 10 minutes).
Heat butter in large skillet on medium-low heat.
Add onion and garlic, stirring occasionally, until lightly brown (approx. 20 minutes).
Drain potatoes and add to onions.
Continue cooking while stirring for approximately 10 minutes.
Add salt and pepper to taste.
Transfer to mixing bowl and mash lightly while adding heavy cream.
