Tomato and cucumber salad

Balsamic Vinaigrette | |
2 Tbsp | balsamic vinegar |
1 Tbsp | olive oil |
1 1/2 Tbsp | Dijon mustard |
1 1/2 Tbsp | water |
1/2 tsp | fresh basil |
1/4 tsp | fresh ground pepper |
Salad | |
4 med | ripe tomatoes |
3 med | cucumbers |
1. In a small bowl, whisk the vinegar and oil. Add mustard and oil, whisk until blended. Whisk in basil and pepper.
2. Core the tomatoes and cut into wedges. Cut each wedge in half. Peel the cucumbers and slice into 1/2 in. Rounds. Quarter the rounds.
3. Toss the tomatoes and cucumbers in a large bowl. Pour the dressing over them., stir gently to mix, and then set aside at room temp to marinate for 1 hour
