Barbecued Stuffed Mushrooms

8 large | flat portabello mushrooms, or chestnut mushrooms |
Stuffing | |
45 ml/3Tbsp | soy sauce |
15 ml/1Tbsp | clear honey |
45 ml/3Tbsp | chopped fresh parsley |
400g/14oz can | chickpeas, drained |
16 | green olives, pitted and quartered |

To make stuffing, mix soy sauce, honey and parsley together. Stir in chickpeas and olives. Place mushrooms on large squares of aluminium foil. Divide mixture between mushrooms, then make loose foil parcels, sealing edges well. Cook on the barbecue or in a hot oven (190C/375F/Gas 5) for 10-15 minutes.
