Karen's Chicken Souvlaki Shwarma

12 oz | boneless chicken breasts |
1 tsp | grated lemon rind |
2 T | lemon juice |
1 T | olive oil |
1 tsp | dried oregano |
1/4 tsp | each s&p |
Half | red onion, cut in 1" wedges |
Half | cucumber, thinly sliced |
1/4 c | tzatziki sauce |
4 whole wheat pitas | |
1 | tomato, cut in chunks |
1 c | shredded romaine |
Cut chicken in 1" cubes.
Toss with lemon rind and juice, oil, oregano, s&p. Let stand 10 mins.
Alternately thread chicken and onion on skewers. Broil on foil-lined pan about 10 mins.
Spread tzatziki on pita. Top with chicken and onion, tomato, cucumber and lettuce. Fold.
