Devil's Food Cake

4 oz | cocoa,, (small size Bourneville tub) |
2 cups | boiling water |
20 oz | flour |
1 tsp | bread soda |
2 tsp | baking powder |
1 tsp | salt |
8 oz | butter |
4 cups | sugar |
4 | eggs |
2 tsp | vanilla |
1 cup | buttermilk or milk soured with 1 tbsp cider vinegar |
Put boiling water and cocoa in small bowl. Set aside.
Cream butter and sugar, then eggs in large bowl.
Combine dry ingredients; then add to butter/sugar/eggs, alternating with cocoa mixture and milk, finishing with dry.
Turn into well greased pan ( or pans) and bake @ 180C for about 30 -minutes...cupcakes about 25 minutes.
