Spaghetti Squash & Radicchio Salad

1 spaghetti squash (3-3.5 lbs), halved lengthwise and seeded | |
2 small heads | radicchio, cored and shredded, (about 4 cups) |
1/8 t | sea salt |
1/2 cup | chopped parsley |
1 | lemon,, (juice) |
2 oz | parmesan cheese,, (shaved) |
Roast squash at 350 degrees for 1 hour 15 mins or until tender in on a rimmed baking sheet lined w/foil misted with cooking spray. Remove from oven and place cut side up to cool.
Place radicchio into a large bowl. With a fork, scrape out squash into bowl; discard skin. Season w/salt and pepper; toss well. Add parsely and lemon juice; toss to combine. Top with cheese
