1 cup | low fat Graham crumbs |
3/4 cup | rolled oats |
1/2 cup | unsweetened shredded coconut |
1/4 cup | chopped walnuts |
1 tsp. | Vanilla |
4 tsps. | Light stick butter |
1 tbsp. | Fat free milk |
2 cups | icing sugar |
1/2 tsp. | Vanilla |
2 oz. | Bittersweet chocolate |
2 tsps. | Light butter |
Line 9" square baking pan with plastic.
Melt 1/4 cup light butter in a sauce pan over medium heat.
Add 1/4 cup sugar-1/3 cup unsweetened cocoa &1 egg. Cook for 1 minute
Stir in 1 cup Graham cracker crumbs-3/4 cup rolled oats-1/2 cup unsweetened shredded coconut-1/4 cup chopped walnuts & 1 tsp. Vanilla.
Pat the mixture into the bottom of the pan & freeze approximate 30 minutes
With an electric mixer beat 4 tsps. Light butter and 1 tbsp. Milk. Beat in 2 cups icing sugar & 1/2 tsp. Vanilla. Spread over crust and chill 15 minutes.
Microwave 2 oz. Bittersweet chocolate & 2 tsp. Light stick butter 10 seconds & stir. Spread over filling & chill 2 hours.
