Cook Time 40 Minutes Ingredients
    ¼ cups  Bacon, Chopped
    ¼ cups  Bell Pepper, Finely Chopped
    ¼ cups  Onion, finely chopped
    ¼ cups  Button Mushrooms, Finely Chopped
    2 cloves  Garlic, Finely Chopped
    2 pounds  Ground Beef
    1-½ cup  Shredded Cheddar Cheese
    ½ cups  Oatmeal
    ½ cups  Light Brown Sugar, Divided
    ½ cups  Yellow Mustard, Divided
    ½ cups  Ketchup, Divided

Preparation Instructions
Preheat oven to 375 degrees.
Cook bacon until soft over medium heat to render the fat.
Add bell pepper, onion, mushrooms, and garlic. Saute until soft. Set aside to cool completely.
Once vegetables are cooled, combine ground beef, vegetable and bacon mixture, cheddar cheese, oatmeal, 1/4 cup brown sugar, 1/4 cup mustard, and 1/4 cup ketchup. Mix thoroughly.
Portion meat mixture into 12 even portions in a traditional muffin pan. These should be around 1/4 cup portions depending on your pan.
Bake meatloaf “muffins” for 30 minutes.
While the “muffins” bake, combine the remaining 1/4 cup brown sugar, 1/4 cup mustard, and 1/4 cup ketchup. Whisk until mostly smooth. This makes your topping.
After the “muffins” have baked for 30 minutes, remove from the oven. Spoon 1 teaspoon of topping over each “muffin” and spread over the top to cover completely.
Place “muffins” back into oven for 10 minutes. Serve immediately and enjoy the sounds of “YUM!”
